Select onions with a smooth and shiny paper-like skin. Avoid selecting onions with bruises or piercings in the skin and flesh. Sprouting is an indication of age and poor storage. However, if sweet onions have sprouted in your pantry,  you can use the sprouts as a substitute for scallions.
